It's too much work to post in color all the time, Im too lazy.

I'm having a bit of trouble on which Electric type to use for my White 2 team: Electivire, Ampharos, Gavantula, or Eelektross.

Eelektross, for Levitate, no weakness etc..

But I also want to make sure I don't have too many physical sweepers. Serperior, Arcanine/Darmanitan/Chandelure, Lapras/Starmie/Carracosta, Lucario, Tyranitar/Golurk/Haxorus/Hydreigon, and Electivire/Ampharos/Gavantula/Eelektross/Swoobat/Reniculus/Tornadus.

In that case I'd recommend Galvantula. No specific reasoning behind that, I've just had good luck with it in the past.

And should I play at singles or doubles?

I thought of using Gavantula w/ Gastro Acid for doubles, but it'll only work if I had Archeops and/or Slaking.
