Charmander, Pokemon Blue Version
Mudkip was my first starter pokemon in sapphire. And i'd have to say I was pretty happy to get that pokemon.
Cyndaquil was my first starter in Crystal and I loved it! Still one of my favorite starters.
Charmander in Red. Named it Charmander.
Charmander in Blue was also mine, although I've gone on to always (with the obvious exception of yellow) start with water types since.

Torchic, in Pokemon Ruby. I almost always pick fire starters by default, not because they're fire types necessarily, but I like them the most. Although fire types have come to be one of my most favourite types.
Squirtle, back in Pokemon Red. No idea why I picked it back then , as its easily my least favourite of the 3 Kanto starters.
My first starter was back with Red, picking Bulbasaur. However, once Gen II rolled in, I started going for the Fire-type starters, since Fire-types were a bit uncommon to begin with. Plus I started to see how powerful Fire was at that time. So after that, I picked Cyndaquil in Silver, Gold, and Platinum, Torchic in Sapphire, Ruby, and Emerald, Chimchar in Platinum, and Tepig in Black, White, Black 2, and White 2. I did also use Turtwig in Diamond, and sometimes in one of my other Platinum games, as well as trade over a Treecko into Emerald to work alongside Blaziken, but generally speaking, Fire-types I preferred for starters. And as you can see, I never used a Water starter (I did use them in some cases, but never as my first Pokemon). I'll be choosing Fennekin when X/Y comes out, regardless of what evolution or type combo it might have.
So, as you can see, Fire-type starters are my preferred choice, with Grass as a sorta second place (if it had good attacks and/or type combos), but never used Water (probably because Water-types are so plentiful, even if common ones aren't as "powerful" as the starter versions are).
Oh, Cynthia. Where for art thou Cynthia? Heheh. Seriously, where are you!?

I just noticed I misread the thread title as "Fire starter", so my previous reply doesn't make much sense.
Anyway, my first starter was a Bulbasaur in Pokémon Blue. I found it the coolest of the trio and I am always liked nature-related powers, so...
My first starter, on Pokemon Blue, was Squirtle. I was going to pick Charmander, but not Bulbasaur (I've never started with a grass type, but don't know why). The reason I didn't was because, at school during show and tell, my friend brought in his gameboy, and I saw him battling with Squirtle, and he was the first Pokemon I ever saw on the games. Had to pick him.
