Eevee. I never evolved it in Pokemon Yellow and even now won't evolve it unless I really want one of the Eeveelutions that badly. In BW2 I wanted a Glaceon but found out I couldn't get it until post game. So, I kept my Eevee an Eevee until I could evolve her into what I wanted. And she was good not least because she had adaptability.
Monferno is one Pokemon for me I don't want to evolve and spent forever just trying to find an Everstone for him.

I actually tend to like the final evolutions the best, so I evolve my Pokemon without any problem. I also want my Pokemon to be the strongest they can be, and keeping them unevolved doesn't always work with that, heh.
THOUGH there's one Pokemon I swear I'll never evolve, and that is Scyther. Favorite non-legendary Pokemon of all time so there's no question about it, and he can already stand on his own without evolving so he's all cool.
Mine was always, and most likely forever will be Sunkern. I believe that Sunflora seems a bit... wrinkled, and could have a better movepool. Additionally, despite the repulsive stats of my favorite seed Pokemon, those huge eyes and tiny smile that screams out adorableness still have their own appeal. ^^' Besides, if you were to just attach an item... Nevermind.

I normally don't have a problem with evolving Pokémon, but in Diamond I once refused to evolve my Mime Jr. It was just so adorable, and I really despise Mr. Mime. Mime Jr. was kinda useless against the league, but there was NO WAY I was having a Mr. Mime on my team, ever.
I love eevee and her evolutions but I always have to have an eevee, one that will never evolve. My tough little eevee with last resort, shadow ball, quick attack and bite. ^-^
In Black 2, I have a level 23 Budew that I don't ever wish to evolve. It's only because I love Budews, and I don't intend to use it in any major battles, just to nonchalantly train it. I also have two Roselias in the same game; they had the egg that Budew hatched from.

I had an Electrike in Ruby, which I liked to keep in my party. Even I though I had a lot of other stronger Pokemon. And I didn't evolve it either, somethings are left better unevolved.
