Well, I guess there are humans in the show that have some powers (psychic powers, controlling aura, etc) that could be an inkling from having been...like...shit, I dunno.

As indicated by various in-game Pokédex entries and some early anime episodes, real animals seem to co-exist with Pokémon. Which is good, because I bet Miltank must taste horrible.
With that said, I'm thinking humans are still considered to be animals in the Pokémon world.

Well, I believe the theory exists that humans and pokemon are related, and that normal animals form a second party. Maybe humans were the outcome of a animal/pokemon relationship (creepy). So, maybe a bit of both.

I think that Pokémon are only modified or evolved animal species. So in my opinion Pokémon are actually animals and so are humans.

I'm guessing humans are not Pokémon. If they were Pokémon, why hasn't a villain tried to use Pokéballs on people yet? Just because they can be psychics or use aura powers doesn't mean they're Pokémon. I'm sure they're all related, but humans don't fit into the "Pokémon" category.
Here are the phylogenies I find most likely:
Animals --> Humans
Animals --> Pokémon
OR Animals --> Pokémon --> Humans
(Compare Animals --> Apes and such --> Humans; chimpanzees are still around, yet humans are not considered chimpanzees, but are still considered animals)
Pokémon having human ancestors, however, is less likely than the opposite based on physiological evidence.
It's also possible that Pokémon are not monophyletic, and some, such as many Grass types, come from other kingdoms entirely.
I think humans in the Pokemon world are just treated as humans.
The "Sinnoh Folk Tales" in Canalave's library seem to hint at a time when humans and Pokemon were considered the same. But they also seem to make clear that those times are long past. Perhaps it is simply metaphorical, or perhaps it truly refers to a time when humans had elements, attacks, and other things common to all Pokemon.
Either way, I think the fact that they are considered different now refers to how Pokemon and Humans no longer coexist in the same ways.

It depends if you believe there are animals in the Pokemon world.
I do, therefore humans are animals.
Early in the series, it was easy because there were animals and Pokèmon. But recently there've been almost no animals.
Nevertheless, I would say the following:
-Humans are animals in that they're living creatures.
-Pokèmon are living creatures.
-Since Pokèballs don't work on humans and no one's ever seemingly caught an animal, Pokèmon probably have something unique to their biology or molecular structures different from other living creatures.
