I pronounce it the Japanese way, so Po as in pole, ke as in kettle, and mon with the o sounding like the O in Ole.
The way it's supposed to be pronounced: ポ(po) ケ(ke) モン(mon). Short for "poketto monsutaa" (ポケットモンスター).
In English, it would be said as "poke" as in "Pocket" and "mon" as in "Monsters". Pocket Monsters. Some people don't get it though and pronounce it in a bunch of weird ways that don't make sense. I have no problems with "Poh-kay-mon" or "Poh-keh-mon" (the latter is close to the Japanese pronunciation), though "Poh-kuh-mon" puffles my jigglies.
Given the accent above the "e" the proper pronunciation is "Poke-ay-mon" However, that's just too much work.
I, like most people, pronounce it "Poke-ee-mon".

The way it's supposed to be pronounced. Basically I just read the letters, as with every Japanese word. ポケモン. Po-ke-mo-n.
The most common mistake I see with people pronouncing it is that they get the "o" in "mo" wrong. You know the name Mo? That's how the "mo" in Pokemon meant to be pronounced.

I usually always say poh-kee-mon, though sometimes poh-kuh-mon slips out. I don't think I've ever called it poh-kay-mon ^^'
Though I'd take either of these over the way my mom says it, poh-ker-man :P

I used to say "Poh-kuh-mon" in 1998. Next, I used to say "Poh-kee-mon" until around 2001.
Since 2002, I've been saying it in two different ways: either "Poh-kay-mon" or "Poh-keh-mon" for me. I'm partial to "Poh-kay-mon," though. xD.
