Poh-kay-mon is WAY too much of a mouthful and it sounds like I'm trying to be some kind of idiot. Americans probably find it easier to say poh-kay-mon, though. Poh-kuh-mon is quick and easy to say, and (I think) it sounds smarter.
I've always pronounced it "Poh-kuh-mon", just like everyone else I know. Occasionally I decide I'm going to pronounce it properly ("Poh-kay-mon"), but I never actually do.

I use to pronounce it differentially but that was way back when I was about 10/11.
I never really say it as someone mentions it, I skip the intro and start shouting attacks & throwing plastic balls ^^

Apparently the official pronunciation is "poh-kay-mahn", but to me, that sounds really stupid.
I prefer "poh-keh-mahn".
Also, it's ポケモン, not ポケイモン.
Personally depends on who I'm talking to at the moment.
But usually Pok-eh-mon.
The difference between 'keh' and 'kay' is miniscule if not nonexistence. It's going to depend on your accent what it actually sounds like.
Polk-am-mon
My pronunciation comes out somewhere between "POH-keh-mahn" and "POH-kay-mahn". My mother pronounces it "PEAU-kuh-mahn" (yes, you read that right, "PEAU"). My brother deliberately pronounces it "Pokey Mon" just to piss me off.

Wikipedia's Pokémon entry says that it's pronounced "Poh-kay-mon", and so that's what I follow.
