Because that's more complicated of a name. :< And because that would just as easily apply to any combo of the triplets.

I see it as the idea that Cress and Chili have to hide their relationship from their brother, and therefore have to keep it a secret. Omerta is a code of silence, mostly referring to the mafia, in which they are bound to not talk about certain activities. I would think incest would count as an activity they'd be um.... a little hesitant to divulge information about.
